A team of experts passionate about gastronomic and technological innovation

Axion Bites was born from the union of three professionals who, after working in different fields, decided to follow their true passion: gastronomy. We met at the Basque Culinary Center, where we discovered not only a shared vision, but also the conviction that gastronomy can be an engine of experiences, profitability and transformation.

Today, Axion Bites is a multidisciplinary team with real experience in kitchen, dining room, management, creativity and business strategy. We have worked in high-end kitchens, led openings, optimised operations and built purposeful brands. In addition, we collaborate with external experts in innovation, branding, design and training to offer comprehensive and up-to-date solutions to the gastronomic market.

David Cordobés González - Co-founder

David Cordobés González

Co-founder

David Cordobés González, born in Madrid, studied industrial engineering at the Pontifical University of Comillas Icai and expanded his training in Strategic Management in the London School of Economics.

After working as a banking analyst, he founded in 2020 with his brother the pastry Alex Cordobes, now a national reference in cheese cakes.

He conducted practices in the Michelin star restaurants of the CXC group (enjoy and share), as well as in the Alchemist Kitchen test (Copenhagen), and participated in R&D projects in BCC Innovation.

His final project was developed in Boston in collaboration with the PAGU restaurant and Harvard Science & Cooking, focused on the study of proteolytic enzymes through HPLC.

Currently, he directs the operations and R&D of Alex Cordobes and leads its national and international expansion.

José Pérez Luna - Co-founder

José Pérez Luna

José Pérez Luna was born in Venezuela, where he studied administration and undertook several own businesses in Caracas, covering sectors such as the construction and import of raw materials.

In 2017 he moved to Spain and began his training at the Basque Culinary Center, where he studied culinary gastronomy and arts with specialization in business innovation.

He has worked in very high level kitchens, such as Arrels (a Michelin star), in Labe, and in the Loca Grouppen operation.

In Axion Bites, it leads the creation and development of gastronomic concepts with a strategic and creative approach, in addition to taking care of communication and direct relationship with customers.

Xavier Ramon Nicolau - Co-founder

Xavier Ramon Nicolau was born in Barcelona, ​​where he studied multimedia engineering.

In 2020 he decided to give a new course to his professional career and moved to San Sebastián to study culinary gastronomy and arts.

During this stage, he worked in high -level kitchens such as Les Cols, Labe Restaurant, Saltxipi and two Pebrots, where he acquired a deep understanding of gastronomic processes.

In 2023 he began merging technology and gastronomy collaborating with BCC Innovation and Remy Robotics.

He currently works as Senior Developer in Tspoonlab, promoting technological solutions for the food sector.
